About those pasta pots that come with the nesting colanders…?
Why don’t the nesting colanders reach further into the pot? Mine ends about 3 inches above the bottom of the pot, I can’t even fit spaghetti into it until the bottom part of the spaghetti cooks. It bothers me that the one half of the noodle gets cooked for longer than the other.
Am I missing something about these pots?
Because if it touched the bottom, the pasta might burn, or at least adhere to the bottom of the colander.
You should have the water at a full boil when you put in spaghetti, and have enough water (or not too much spaghetti) so that it can recover fairly quickly – within 45 secs to a minute, preferably – back to a boil.
You need to stir it initially more than later. Scrape the bottom to make sure nothing’s stuck there. After the first couple minutes, when it’s back to boiling at it’s scraped, it should be okay on its own for most of the rest of the time.
So, scrape initially, and make sure you don’t overwhelm the water with pasta, and that it can get back to a boil in a reasonable amount of time. A minute, or even two, is reasonable. Five minutes to return to boil says you have too much pasta (or a low quality burner).
